🌚 🍂 It’s a new month, new moon, new season and new beginning 😌

It’s also a particularly dreich day here in the Elgin, with the September rains pitter-pattering outside and the call of something nourishing and heartwarming calling me into the kitchen…

Perfectly aligned with the season, the vibe and my own new moon/new month intentions to eat more chakra balancing, healthy home cooked meals - this pumpkin stew is the perfect way to honour it all 🧡

I love aubergine, onions and peppers so usually have air-fryer oil free batches in my fridge ready to throw together.

Today I added my cooked veg to a saucepan with a can of Bakeroo pumpkin purée, a can of chopped tomatoes in juice, a cup of vegetable broth, 2 tbsp of warming ginger and garlic purée, PBfit fat removed peanut butter powder, finished with a swirl of sweet freedom vegan honey and some chilli flakes, along with some black pepper and maldon garlic roasted sea salt 😍

As a mama, a busy working woman, a women’s coach and spiritual practitioner I’m all about making things quick, easy, accessible and enjoyable - so you’ll be pleased to hear you can whip this meal out in literally a matter of minutes 💁‍♀️
